Food Experiments: Parmigiana Avocado Chicken Deluxe

Cooking for some people can be like a science experiment within the confines of your home, minus the plastic goggles. I am always on the lookout for new things, especially anything that includes avocado.

With little cooking experience, I would have to rate this recipe at moderately easy, however, make sure you have your ingredients, tools and spices prepared before you begin. While my finished product didn’t quite look the same as what I was attempting to copy, it was truly delicious! Also, I have doubled the recipe, if you’re family are big eaters like, you’ll thank me.

Parimigiana Avocado Chicken Ingredients:

  • 4 Chicken breast fillets
  • 1 Cup of plain flour
  • 4 Tablespoons of fresh milk
  • 4 Eggs
  • 3 Cups dried breadcrumbs
  • 4 Tablespoons of olive oil
  • 1 Cup of tomato sauce
  • 4 Avocados, sliced
  • 1 Cup of shredded mozzarella

Directions:

  1. Preheat oven to 350 degrees Celsius. Place the chicken in a plastic bag, use mallet to thin out the chicken.
  2. Place flour, breadcrumbs and eggs into separate bowls. You can whisk the egg with a little bit of milk if you wish, I however just used the egg.
  3. One piece of chicken at a time, dip the breasts into the flour (shaking off the excess), then into the egg, and then the breadcrumbs. Secure any loose breadcrumbs with your fingers.
  4. Place on a prepared baking tray with tin foil until all the chicken is finished.
  5. Brush the prepared chicken with olive oil, bake for 20 minutes.
  6. While waiting grate the cheese and cut the avocado into slices.
  7. After 20 minutes removes the chicken and top first with the tomato sauce, then the avocado slices and finally the mozzarella cheese.
  8. Bake for another 10 minutes.

For those of you who have never had quinoa, let me tell you, it is divine. Not only is it delicious, but it provides excellent nutrition and in my opinion is labeled a super food. It is an ancient grain that is high in protein, not only that, but complete protein. Which means that is has all nine essential amino acids. This grain is a necessity for vegans, but should be enjoyed by everyone.

Mediterranean Quinoa Ingredients:

  • 1 1/2 Cups of quinoa
  • 3 Cups of water
  • 1 1/2 Cups of sliced mushrooms
  • 1/2 Cup of diced peppers (red, green or yellow)
  • 1/2 Cup of diced tomatoes
  • 1/2 Cup of crumbled feta
  • 1/2 Cup of Mediterranean salad dressing (this may needs to be adjusted according to taste)
  • Red wine and olive oil
  • Salt and pepper to taste

Directions:

  1. Mix quinoa and water, bring to a boil. Then simmer on low for 15 minutes.
  2. Slice and dice your mushrooms, peppers, tomatoes and crumble your feta.
  3. In a frying pan put a dribble of olive oil and bring to a medium/high heat.
  4. Sauté the mushrooms, using a splash of red wine for taste (feel free to pour yourself a glass while you’re at it).
  5. When the mushrooms have browned add in the peppers, and continue to sauté until they are soft.
  6. Drain your quinoa, and add the Mediterranean salad dressing, tomatoes, sautéed vegetables and feta.
  7. Mix together and add the salt and pepper to taste

This meal is to die for, especially if you love avocados and you aren’t afraid to try new things. I required help in the kitchen, and I recruited my older sister to do my slicing and dicing of the vegetables. However, other than that this meal is not hard to make and will please everyone.
